-First and foremost, to put in subject who does not have much idea about it, what is a tea tasting?

-The tasting is the process by which we can identify the different characteristics of a food product through the senses, such as texture, taste or smell. The technical tasting of the tea in particular is a methodology that I developed a few years ago, through determined steps, to study the tea in all its phases: the dry leaf, the wet leaf and the liquor (the liquid that we obtain after infusing the leaves). tea). Its objective is to identify and describe the organoleptic characteristics of tea: its color, shape, aroma, etc., in reference to elements that we know, from a perspective as objective as possible. It is a sensory experience performed by people trained in the tasting process and sensory sciences.

When I entered the world of tea I started looking for information about teas I did not know in books, and I found very simple descriptions about each variety, which did not provide much information to know a tea in a technical way. That’s why in 2009 I decided to work on the development of this tasting technique, which I published for the first time in my book “Manual of the Sommelier of Tea” in 2010 and in 2013 I presented it at a conference at the World Tea Expo in Los United States of America.
